Spaghetti & Lentil-Packed Meatballs

250g wholemeal spaghetti
420g can Woolworths lentils, no added salt
200g extra lean beef mince
4 cloves garlic, crushed
½ bunch parsley, chopped
2 tbs mixed grain breadcrumbs
½ tbs olive oil
2 x 400g cans diced Italian tomatoes, no added salt
250g punnet cherry tomatoes
100g shaved parmesan, to serve
1. Preheat oven to 180°c. Line a baking tray with baking paper and cook pasta as per packet instructions.
2. Place lentils, beef mince, half the garlic cloves, half of the parsley, breadcrumbs and pepper to taste in a food processor and blitz until roughly combined.
3. Shape lentil and beef mixture into meatballs and place on prepared tray. Bake for 15 minutes or until cooked through.
4. Meanwhile, heat olive oil in a medium frying pan over medium heat. Sauté remaining garlic for 1-2 minutes, add italian tomatoes and cook for 2-3 minutes or until reduced. Stir through cherry tomatoes, meatballs, spaghetti and remaining parsley and season with pepper to taste. Divide among serving bowls and top with parmesan to serve.
